I don’t know what the weather is like where you are, but here, it’s hot. I mean really hot. Like, “are you sure we’re in Canada?” hot. I’m not complaining, though. I love the heat. I love spending time outside, primarily on patios {there’s a reason they call it patio season, you know…}; and, while I would happily spend every day on a patio, apparently it’s not the most frugal of activities. Strange, eh?

Well, for those days that a patio is calling your name, stay home {or head to a pal’s place; wherever has an optimal sun-soaking space} and whip up one of these Lion’s Summer Ale Margaritas. It’s a not-too-sweet take on a classic margarita, and includes pineapple juice {to enhance the pineapple goodness that the beer already boasts} and tequila {because it’s not a margarita without the tequila!}, and is finished off with a fresh pineapple wedge for good measure.

Lion’s Summer Ale Margarita
Makes 1

INGREDIENTS:
Fresh pineapple wedge
Sea salt flakes {or table salt, if desired}
1 ½ ounces tequila blanco
2 ounces pineapple juice
2 ounces fresh lime juice
1 bottle Granville Island Lion’s Summer Ale {or similar beer if unavailable}

INSTRUCTIONS:
1. Cut a little slice out of the tip of your pineapple wedge, and place it on the rim of a beer glass. Run the wedge around the edge, and then remove it. Put about a tablespoon of salt on a small dish, and then flip the glass over and rub the rim of the glass in the salt. Flip it back over, and throw a couple of ice cubes in the glass.

2. Pour the tequila, pineapple juice, and lime juice in the glass, stir.

3. Top up the mixture with the ale, place the pineapple wedge on the rim, and enjoy!
