Tis the season, friends. You know, pumpkin everything season. Lattes, scones, cake, muffins… and, most importantly, these cute little Spiced Pumpkin Oatmeal Cookies.

A generous amount of pumpkin puree adds an unmistakable softness – an almost cakey texture to these not-too-sweet, perfectly spiced cookies. Pair one {or ten} with a hot cup of coffee or tea, and you’re set.

SPICED PUMPKIN OATMEAL COOKIES

INGREDIENTS:
1 cup all-purpose flour
2 ½ teaspoons ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon ground ginger
1/8 teaspoon ground cloves
½ teaspoon baking soda
1/8 teaspoon salt
½ cup butter, melted and cooled to room temperature
1/3 cup brown sugar, packed
¼ cup granulated sugar
1 large egg
1 ½ teaspoons pure vanilla extract
1/3 cup pumpkin puree
1 ½ cups rolled oats
Raw or coarse sugar, to finish


INSTRUCTIONS:
In a large bowl, whisk flour, spies, baking soda, and salt; make a well in the centre of the mixture and set aside.

In another bowl, whisk butter, sugars, eggs, vanilla, and pumpkin. Pour into the well in the centre of the dry ingredients and mix just until combined. Stir in the oats. Cover the bowl with plastic wrap and refrigerate for 30-60 minutes.

Preheat the oven to 350 degrees Fahrenheit and line a large baking sheet with parchment. Scoop the dough {using a cookie scoop or tablespoon} onto the prepared baking sheet, about 2 inches apart. Lightly grease a silicone spatula and gently press down on the cookies to flatten them slightly. Sprinkle each cookie with a bit of raw or coarse sugar.

Bake in the preheated oven for 8 to 12 minutes, or until the cookies have lightly browned along the edges. Let them cool on the pan for about 5 minutes before transferring them to a wire rack to cool completely. Store in an airtight container for up to 5 days.
