Oatmeal in Four Minutes

It’s on days like this that I love to enjoy a simple breakfast on my patio, in the crisp morning air. But it has to be simple – I don’t want to be stuck in the kitchen when I could be outside. Sure, I could grab a muffin or a scone, but I want something warm… something substantial.


Enter: Four-Minute Oatmeal.

With this delightful dish there’s no muss or fuss with pots and pans, and no clean-up… it’s just a hearty breakfast that is full of nutrients, and is ready in less than five minutes.


Sounds just about perfect, doesn’t it?


Four-Minute Oatmeal
Serves 1

Ingredients:
1/3 cup rolled oats (not quick cooking)
1-2 teaspoons seeds or nuts of your choice (flax, chia, sliced almonds, chopped pecans)
½ cup fruit of your choice (chopped apple, peach, nectarine, cranberries, blueberries, strawberries, rhubarb)
¼ teaspoon cinnamon
¾ cup water
Pinch of salt
Dash of pure vanilla extract
Maple syrup, to taste
Milk, to serve

Instructions:
Combine all ingredients, except for maple syrup, in a microwave-safe bowl. Microwave on high for one minute, stir, and repeat two more times (total of three minutes cooking time). Add maple syrup, to taste, and milk, if desired.
